The blog is back!

It’s been a while, we know. We’ve been busier than ever at Brodflour, and we are so happy about that! Since we re-opened our doors in July we’ve been ecstatic to see familiar and new faces in the bakery. But, as fun as slinging sandwiches and lattes is, it’s time to get back into the groove of posting recipes, how-tos, and tips and tricks showcasing fresh flour, milled right here at Brodflour.

First up is a how-to featuring our new-and-improved Fresh Milled Spelt Pancake Mix! We’ve changed up our recipe a bit, adding in fresh-milled Spelt flour for a softer texture and sweeter flavour. There’s also some fresh-milled Prairie Hard Red to add structure, plus sugar, baking powder, salt, and cinnamon.

PROCESS:

You’ll need:
+ 4 large eggs
+ 2 1/2 cups milk
+ 6 tbsp butter (melted and cooled slightly)

1. Start by whisking your eggs and milk in a large bowl until frothy. The more bubbles the better in our book.

2. Add in your melted butter to your milk and eggs. Make sure it has cooled enough so it doesn’t cook the eggs. Combat this happening by gently whisking as you pour in the butter.

3. Whisk all your wet ingredients together until combined and frothy once again.

4. All your dry ingredients are right in the Pancake Mix bag, you can either dump them in a bowl and whisk ’em up, or give the bag a rigorous shake. Once it’s all mixed, add it into your wet ingredients and fold gently until combined.

5. Let the finished batter sit for 15 minutes. This allows the baking powder to activate and the flour to absorb liquid. You’ll see it get thicker and bubbles will form, this is GOOD!

6. While the batter sets, heat up a large skillet over medium-high heat.

7. Add in butter or non-stick spray to the pan once almost heated. When it reaches temp, use a 3/4 cup measure and gently pour your batter onto the skillet. For perfectly round pancakes you can use the base of your cup measure to spread batter in an even circle.

8. Cook for 2-3 minutes or until bubbles form on the top of the pancake. Flip and cook 2-3 minutes more.

9. Continue the cooking process for the remaining pancakes, you should get about 12 medium sized pancakes. Re-grease the pan as needed to prevent sticking.

Family style — topped with fresh whipped cream, strawberry jam, sliced pears and cinnamon sugar.

Arrange pancakes on a large platter in a circular pattern. You can top your pancake platter however you like! Room temp butter, maple syrup, and flaky salt are a classic option. See the photo above for how we like to top ours at the bakery for a team snack.

Our pancake mix is versatile and can handle various mix-ins like 1/2 cup chocolate chips, 1/2 cup oats or nuts, 1/4 cup shredded cheese, or 1/4 cup fresh fruit or berries.
